"Have you ever noticed that if you weigh yourself immediately before bed, and immediately after getting up in the morning, you wight less in the morning?"

Can someone explain why we weigh less in the morning?

Have you ever noticed when a bear goes into hibernation it weighs less in the spring?

It's because our body still needs energy to keep going, and we're not eating anything, so it feeds on our extra fat supply through the night.

Bread rises because of yeat....and I dunno, maybe some of the atoms evaporated into the air? can someone explain this lol

Solids don't turn to gas though, liquids do. So unless your cake or whatever is turning into a liquid some time during the cooking, the mass is the same.
